A balanced brunch – Green Beans with Bacon and Eggs
There’s nothing I love more than weekend brunch. You wake up a bit later than usual, you haven’t had breakfast so you’re ravenous and it’s late enough for lunch so you are absolutely allowed to indulge. There are so many things you can possibly eat for brunch but this is one of my absolute favorite recipes. It’s a mountain of crunchy fresh green beans tossed in a light vinaigrette and topped with strips of crispy bacon and an olive oil fried egg. It’s absolutely divine! It’s got everything you want for a guilty brunch – runny fried eggs and smoky charred bacon… but you’ve got you’re fresh greens. Here I use french beans although technically you called also use our local sitaw, but french beans work best. I simply blanch them in some salted boiling water till they’re still a bit crunchy. They should be floppy but still snap apart when you fold them in two. Rinse in ice cold water to keep that verdant green. Toss in your favorite dressing – here I use my usual dijon, red wine vinegar and olive oil combo, but you can use anything tangy that you like. Add some minced red onion and top with crisp bacon and a fried egg. Trust me it’s soooooooo good! Happy brunching!
